Bitterling: a unique drink of aromatic herbs from Drenthe

Bitterling is not just any syrup. It is an artisanal blend of aromatic and bitter herbs, created by Eelco Hendriks, the founder of De Bittelier. After years working as a chef in the south of France, Eelco decided to follow his passion for herbs by training as a herbalist.

During this training, Eelco became fascinated by the rich history of herbal bitters and syrups, as well as the ability to use local ingredients to create unique flavours. This led to the creation of De Bittelier in 2023, with the first product being the stunning Bitterling.

Bitterling, an aperitif that reintroduces the complex flavours of classic bitters in a contemporary, non-alcoholic form. The taste of Bitterling starts with a slight sweetness and an intense spicy character, followed by complex aromas of bitterness that continue to develop into a long, spicy finish.

In the future, De Bittelier will expand its range to include several varieties of herbal syrups. These include a bitter syrup based on locally picked flowers. But De Bittelier also hopes to come up with a limited edition 'wild-picked vermouth' and a gin made from local herbs. We can't wait!
